Hi Everyone!!  It has been quite a while since I posted anything on here.  I've been babysitting my 2 handsome Grandson's 2 days a week, so I'm usually gone Mon. and Tues.  Then on Wed. I'm trying to get caught up on laundry, etc.  The rest of the time I have no excuse, I guess, other than being a bit lazy! LOL  I've also been plagued with 4 bouts of sinusitis since late Sept. and they seem to sap my energy.  Well, enough whining!
Yesterday, Feb. 6th was my beautiful daughter, Mysti's, 30th birthday!!  On Tues. when I was at her house babysitting, I made her an early birthday dinner with one of her favorite meals: roast beef, mashed potatoes, and noodles with brown gravy.  She was also wanting a vary chocolate cake.  I found this recipe for a "Too Much Chocolate" Cake, which I thought sounded perfect for a chocoholic, then I added my favorite Easy Chocolate Frosting.  She loved it!!  So after posting a pic of the cake on Facebook and everyone admiring it, I thought I'd post the recipes on here.  So here goes!!  I hope you try it!! And if you do, please let me know what you thought about it, Please???

"Too Much Chocolate" Cake
Serves 12

1- Devil's Food Chocolate Cake Mix                4 eggs, slightly beaten
1- Box of Chocolate Pudding Mix                     1/2 cup warm water
1 cup sour cream                                               1 cup veg. oil
2 cups semi-sweet chocolate chips

Preheat oven to 350° and grease a 12 cup Bundt pan well.  Set aside.
In a large bowl, beat together everything EXCEPT the chocolate chips.  Beat until smooth, then fold in the chips and pour evenly into the greased Bundt pan.
Bake for 50-55 minutes or until top springs back when lightly touched and it tests done when poked with a toothpick.  You will probably have some chocolate from the melted chips on the toothpick, but
not cake batter.  Let cool on wire rack IN THE PAN for 1 1/2 hours before removing from the pan.
Invert the pan on a plate and shake gently and the cake should slide right out!  You can leave the cake plain, sprinkle it with confectioner's sugar or frost.

Here is the Chocolate Frosting I used to make it the ultimate chocolate lover's cake!!

Easy Chocolate Frosting

1 cup milk chocolate chips
1/4 cup butter, or margarine
6 tablespoons milk
2 cups confectioners' sugar
In a small saucepan over low heat, melt chocolate chips and butter, stirring constantly.
 Beat in milk and confectioners' sugar alternately.  Beat until smooth.  Spread over cake.
 Will frost a 9x13 inch cake.
I cut this recipe in half and use it to frost a Boston Creme Pie!

 I sprinkled some mini choclate chips on top for decoration.
